Tuna Tataki and Curry?

Beet dishes have been so exciting recently! A recent beet challenge had me thinking of ways to use every part of the beet.  I love me some beet greens,  but what to do those gorgeous red stems are just screaming for attention.

Seeing as I am having an incredibly irresponsible love affair with Bengali spices – why not keep that going with a beet stem panch phoran coconut curry.  Topped with that south indian beet paliya and it’s all over.
